Veg burger sandwich: ingredients

Serves 2:

  • 2 slices of vegan cheese (I used IoVeg)
  • 2 veg burgers (I used Pare Pollo by Food Evolution)
  • 2 large sesame seed burger buns
  • Mayonnaise
  • 7 oz (200 g) of tomatoes
  • 3.5 oz (100 g) of broccoli
  • 3.5 oz (100 g) of pumpkin
  • Oregano
  • 1/4 onion
  • Oil
  • Salt.

Veggie burger sandwich: preparation

I created this recipe as a complete meal, so now we’ll prepare both the sandwiches and the side dishes to pair with it—actually, two side dishes: one raw and one cooked.

First, let’s prepare the cooked side: pumpkin and broccoli. Sauté the onion in a tablespoon of oil, and as soon as it starts to brown, pour in a cup of water to continue cooking. In the meantime, take the vegetables. I had some frozen pumpkin that I used, and I also added frozen broccoli. You can add them to the pan as they are, since once they soften, you can easily break them up with a spatula.

Add 1.7 cups (400 ml) of water, three pinches of salt, cover, and let the water absorb.

While you wait, wash and slice the tomatoes, then season them with a drizzle of oil, three pinches of salt, and a sprinkle of oregano.

Cut the buns in half and place them on a grill pan. Heat for 1 minute on each side, then place them on a large serving plate where you can work comfortably, or on two separate plates if you don’t have a large one.

Now it’s time to cook the burgers. Use the same pan you used for the bread and cook them for the time indicated on the package.

Spread some vegan mayo on the buns (I like Heinz, but there are several available at the supermarket now).

Place the burger, a slice of vegan cheese on each bun and add some tomatoes.

Close the buns, and now let’s focus on the rest…

Place each sandwich on a separate plate, and around it, pour the remaining tomatoes and the vegetables cooked in the pan.

And there you have it, your complete meal, perfect for a quick and light meal!
