Radicchio risotto is a classic of Italian cuisine, loved for its delicately bitter taste and creamy texture. Perfect for any occasion, this dish is ideal for an elegant dinner or a family lunch. Let’s explore how to make the most of this versatile ingredient and bring a first course to the table that will impress everyone.

Let’s go through all the steps for cooking a creamy and delicious radicchio risotto, from choosing the right ingredients to achieving the perfect consistency. We’ll also explore some helpful tips for the best possible outcome and suggest a few interesting variations to enhance your radicchio risotto recipe!

Radicchio Risotto Recipes: Ingredients

Servings for 2:

  • 1/4 onion
  • Half a head of radicchio (about 7 ounces)
  • 2/3 cup of parboiled rice
  • 1/2 cup of red wine
  • 2 teaspoons of vegetable bouillon granules
  • Water
  • Olive oil
  • Parmesan cheese.

Risotto with Round Red Radicchio: Preparation

First, slice the onion and sauté it with a tablespoon of olive oil over medium heat. Once golden, add 1/2 cup of water. Meanwhile, wash, slice the radicchio, and add it to the pan.

Pour in the red wine and let it evaporate so the radicchio becomes sweet.

Add the rice.

Pour in 2 cups of water, the vegetable bouillon, stir, and cover.

It will be ready in about half an hour. While you wait, why not start on a second course? I recommend trying soy stew!

If you wish, add a tablespoon of Parmesan. There you go! Enjoy one of my favorite dishes!

Variations of Radicchio Risotto

Radicchio risotto can be customized in many ways to create new and exciting flavors. Here are a few ideas to try.

Risotto with Radicchio and Smoked “Speck”

One of the most classic variations pairs the bitterness of radicchio with the smoky taste of “speck.” In our case, use vegan “speck.” Simply add diced vegan speck after sautéing the onion and radicchio. Let it release its aroma before adding the rice and red wine.

Risotto with Radicchio and Walnuts

For a lighter version, try radicchio risotto with walnuts. The walnuts’ crunchy texture and mild flavor provide an unexpected twist. Add chopped walnuts towards the end of cooking to keep them crunchy, and drizzle a bit of raw olive oil for garnish.

Creamy Radicchio Risotto with Parmesan

If you like extra creamy dishes, mix in grated Parmesan during the final stage. The cheese will blend smoothly with the radicchio and rice, adding a velvety texture. Some even like to add butter, but I prefer skipping it and adding Parmesan directly when serving, for a lighter option.

Radicchio Risotto with Gorgonzola

For those who enjoy bold flavors, add mild or sharp Gorgonzola to the radicchio risotto. Stir in the cheese at the final cooking stage until it melts into a creamy, consistent sauce. This is ideal for lovers of strong tastes.

Nutritional Benefits of the Ingredients

This dish not only delights the palate but is packed with healthy nutrients. Let’s explore the benefits of each ingredient.

Radicchio

The star ingredient of this recipe, radicchio, is known for its antioxidant properties. It’s high in Vitamin C, which boosts the immune system, and contains anthocyanins—responsible for its reddish-purple color—beneficial for cardiovascular health. It’s also low in calories and high in fiber, making it a great choice for a light yet filling meal.

Rice

Rice is an excellent source of complex carbohydrates, providing long-lasting energy. Choosing parboiled rice ensures even cooking and preserves more vitamins and minerals than refined rice. It’s also naturally gluten-free, suitable for those with intolerances.

Red Wine

Red wine in cooking not only enhances flavors but also adds some health benefits. Rich in polyphenols, red wine has antioxidants that may contribute to heart health.

Onion

A staple vegetable in many dishes, onions have numerous health advantages. They’re rich in sulfur compounds, which have anti-inflammatory and antibacterial properties, as well as a good source of fiber and Vitamin C.
