  • Half of a large round radicchio (about 7 ounces)
  • Plant-based tuna (3.1 ounces)
  • Vegan mayonnaise
  • 1 green apple
  • Half a lemon
  • Olive oil
  • Salt

You might be thinking: apple with radicchio? It sounds unusual! But the sweetness of the apple perfectly balances the radicchio’s bitterness, making this salad one of my favorites.

Radicchio and Apple Salad: Preparation

First, wash and slice the radicchio. Using a salad spinner is recommended to ensure it’s well-dried.

Slice the apple and add it to the bowl with the radicchio. Measure and add the plant-based tuna. We’re almost done!

Add a couple of light squirts of vegan mayonnaise—just enough to complement without overpowering the flavors of the ingredients.

Add six pinches of salt, a tablespoon of olive oil, and the juice of half a lemon, then mix everything together.

Ingredients

Serves 2:

  • 200 grams (7 oz) of radicchio
  • Approximately 80 grams (2.8 oz) of vegetable tuna
  • 200 grams (7 oz) of tomatoes
  • Vegan mayonnaise
  • Pitted black olives
  • Capers
  • Half a lemon
  • Oil
  • Salt.
Preparation

First, wash and slice the radicchio.

Then add the tuna, the washed and sliced tomatoes, two squirts of mayonnaise, two tablespoons of olives, two teaspoons of capers, 6 pinches of salt, a tablespoon of oil, the lemon juice, and mix.

I poured it into two different salad bowls.
