Creamy pea soup: ingredients
Serves 2:
- 1/4 onion
- 1 tablespoon olive oil
- 2 potatoes (about 7 oz)
- 14 oz peas
- water
- 2 teaspoons vegetable bouillon granules
- 2 sun-dried tomatoes
- tomato paste
- parsley
- lemon (optional)
Now add the peas. I used frozen peas.
Pour in 4 cups of water, add the vegetable bouillon, the sun-dried tomatoes, and a small squeeze of tomato paste. Cover and let cook for 30 minutes.
In the meantime, why not prepare a main course as well? I recommend vegan burgers cooked in a pan with white wine.
After 30 minutes, blend everything with an immersion blender and serve. If you prepare it a few hours in advance, you can simply reheat it later. For example, I usually make it around lunchtime for dinner, let it cool slightly so I don’t risk burning myself, and then blend it. In the evening, I just heat it for about 10 minutes and it’s ready.
